~~Shrimp Scampi Pasta~~

I am writing a new book, a cookbook titled, "Simply Elegant."  
Readers will enjoy a collection of simple, beautiful and inexpensive dishes.

Last evening, I made Shrimp Scampi Pasta.  Serve it alone or with a salad and your choice of a light wine.... 

I never measure anything, so all is "to taste!"
  • olive oil to saute the shrimp 
  • peeled and deveined large shrimp (raw; 20 to 25 per lb)
  • diced tomatoes (Roma are the best for cooking.)
  • garlic
  • red-pepper flakes
  • white wine
  • salt and pepper
  • a couple of shakes of Italian spice blend
  • unsalted butter (3-5 little squares)
  • capellini (angel-hair pasta or any kind of long noodle you like....even glass noodles will work. 
Saute shrimp (I use the precooked shrimp from the frozen food section of the grocery store) in oil in a large skillet.  Add butter, wine, garlic and spices.  Add dices tomatoes last

Cook the noodles per package.....

Throw everything together....
